BBQ Ribs,,Beef or Pork

Wash the ribs in cold water,pat dry,,DO NOT salt but you can add pepper to taste,place the ribs in a glass dish & cover. Prepare your suace and cover the ribs completely with sauce, Tee likes the Kraft Honey & Smoked Flavor. I prefer to make my own but it is very hot & spicey and most people can't eat it,,I can feel my arteries hard as I type this:(,Place in frig or in cooler for about 4 hours,,overnight is best if possible.

While your grill or coal is heating up remove the ribs from the frig/cooler,bring to room temp/outside temp. Take paper bags,,the type you get from the grocery store,,not plastic,,believe some one tried,, and cut out the bottom at the folds,now cut the bags at one of the folds along the side,place the ribs at one end,,two  slabs to a bag, cover with the sauce, fold and roll the bag so it looks like a burrito and is sealed, tie the bags with bakers string  or wrap in aluminium foil to get a good seal,,this helps hold the sauce and jucies in.

Push the coals to one side of the grill or lower the heat on the gas or use only one side of the burner on med to med high if you have a multi burner grill. Place ribs on opposite side of grill, close lid or cover. Let cook for about 3 to 4 hours depending on the quantity you cook. Rotate and turn the ribs every 45 minutes or so to cook them evenly.

Once the ribs have cooked remove them from bag but try to save the juice inside.

Place on the grill meat side down and let brown for a few minutes,,cover the ribs with the juice you saved,turn and brown other side basting with the remainder of the juice.

Useally the ribs are so tender that when you try to pick them up the bone will pull out.

One note Beef ribs will take longer to cook,This works best with the Baby Back style ribs,,,
